Celebrating Mother’s Day

When it comes to Mother’s Day we all know what makes us melt: the little things, every time. Give us the handmade card with scrawled message, the wee gift or the bunch of flowers picked straight from the garden and we’re made up. What is slightly more controversial is the whole breakfast in bed issue. For many the very thought of scratchy toast bits between the sheets leaves us in a cold sweat. But we ibbi co-founders (Anna, Eliza and Claire)  are all huge fans of this kindest of gestures and so as we approach Mothering Sunday, we thought we’d celebrate in-bed eating by sharing some of our favourite breakfasts in bed. And if it’s served on a wobbly tray swilling with spilt tea, orange juice, fruit smoothie or possibly all three, then all the better. Here’s what we love: our top 5:

  1. Blueberry Bircher muesli, made with greek yoghurt, rolled oats, coarsely grated apple, hazelnuts, blueberries, a drizzle of honey and a sprinkle of cinnamon. (Anna’s favourite, which she would like followed by deliciously fresh sour dough toast and homemade marmalade and a pot of piping hot coffee. She’d also like her laptop, her Fitbit and The Sunday Times and Telegraph)
  2. Smoked salmon with avocado on rye with lots and lots of lemon juice and cracked black pepper (for Claire, plus lots of coffee and the Archers omnibus)
  3. Nutella stuffed crepes and a pot of fresh mint tea. (for Eliza..plus lots of peace, so she can finish reading her current favourite book: Our Souls At Night by Kent Haruf.. and all the Sunday papers, plus the dogs walked.. and the hens fed.. )
  4. French toast with maple syrup and crispy bacon ( a winner every time and difficult for most to destroy)
  5. Strawberry basil bruschetta on toasted baguette, spread with greek yoghurt, chopped strawberries and fresh basil, finished with a drizzle of balsamic reduction and lots of black pepper (delicious but comes with a severe crumb warning)

So Happy Mother’s day! Enjoy breakfast. Enjoy your day. And good luck with those crunchy crumbs.

We foodies at ibbi are always on the look out for inspirational ideas on what to gobble next. And some moons ago our fellow ibbi co-founder Anna heard about the amazing stylist and food writer Anna Jones…and now at ibbi we’re all totally hooked. Anna Jones believes vegetables are essential and should sit at the centre of every table. And her recipes, packed with grains, nuts, seeds and seasonal vegetables, are healthier and lighter (on both body and pocket) than those of many other writers too. She makes you want to eat veggie, even if you’re not vegetarian. It’s exciting, vibrant food. Discover more at http://www.annajones.co.uk and have a look at we_are_food on Instagram or treat yourself to her fabulous book: ‘A Modern Way To Cook’. We love it!

Relaxing This Weekend..With Our Delicious Sweet Treats

IMG_8064How to relax this weekend? We agree. Keep it simple. Read the papers, potter in the garden, enjoy the smell of freshly cut grass and spend time with family and friends. And food? Well isn’t quick and delicious always the way and this weekend why not spoil yourself with a simple throw-together sweet treat, straight from our favourite Northumbrian cook Jane Lovett. Jane’s Creamy White Chocolate Pots can be created in seconds and they’re pictured here in our gorgeous ibbi hand painted ramekins. Read on and enjoy..

Creamy White Chocolate Pots (Serves 6)

7 oz best quality white chocolate

7 oz creme fraîche

7 oz Greek yoghurt

blueberries, redcurrants, raspberries or strawberries

icing sugar to decorate

The Making:

Break the chocolate in to a mixing bowl. Suspend it over a saucepan of hot water until melted. Don’t let the bottom of the bowl come in to contact with the water.

Stir the creme fraîche in to the chocolate, followed by the yoghurt and mix together until smooth.

Spoon in to ramekins, cover and leave to set in the fridge for 4 hours (or overnight).

Just before serving, top with fruit and dust with icing sugar. Drizzled honey is scrummy too.

The Best Espresso

espresso cups for blog 2So first the good news: it’s summer. A time to relax a little and enjoy the sunshine. Kick off your shoes, feel the grass beneath your feet and take a good gulp of that glorious British summer air. Now the bad news: when your holiday’s over, it’s back to those early starts and the shock of having to be alert again at sunrise. So if , like us, you feel a large espresso is the only way to successfully peel back the eyelids first thing in the morning, you might like to have a quick browse at our beautiful hand painted espresso cups.  They’re from our favourite South African pottery and each unique piece is a hand crafted work of art. Just perfect for that first essential espresso. It’s definitely a very beautiful, very delicate and utterly delicious way to start your day.
